La FUGA Family invites you to join a thriving project.
FUGA [évasion, in Latin] is a group founded in 2020 by Quentin Garreau de Labarre (former Director of F&B at George V) and Pierre Doublet (ex-web entrepreneur). Their mission is to create places that allow you to "get out of Paris…in Paris," blending fine gastronomy, unique atmospheres, and lifestyle programming.
The adventure began with Laïa Voltaire, a Mediterranean restaurant hidden in a garden in the 11th arrondissement, located in a former distillery, with a rooftop vegetable garden. On the menu: the South of France, Italy, and Spain.
In 2021, FUGA moved to the water with Francette, a three-story barge at the foot of the Eiffel Tower. Stunning views of Paris, a strong event offering…a modernized and colorful French cuisine.
In 2023, the opening of Riviera FUGA, always on the Seine, near the Pont Alexandre III. A place with a 70's Yacht Club aesthetic, with fusion Italian-Japanese cuisine.
Next Stop: FUGA MONCEAU – Spring 2025
A new complex near Parc Monceau that brings together all the DNA of FUGA with a touch of refinement typical of the 8th arrondissement:
- A Mediterranean garden restaurant: Laïa Monceau, charcoal wood cuisine, a pizza oven for our "Laïazza", a confidential and sunny ambiance
- A rooftop on the 12th floor with panoramic views of all of Paris
- Several event spaces: a retro-futuristic auditorium with 200 seats, a cooking workshop, a hybrid venue around wine: FUGA W

Your Missions
- You will learn to ensure the fluidity of a service, from opening to closing of tables
- You will learn to communicate with the kitchen
- You will learn the setup of a service, serving dishes and drinks to customers
- You will learn and know your menu inside out, thanks to training and tastings that will allow you to approach the tables at your best
- You will ensure the clearing and cleaning of tables

- You are preparing a diploma in service in the dining room and table art
